Ullin is a Finnish dish made with onions, tomatoes, cilantro, and potatoes. The dish comes in three varieties and is usually associated with Mexican cuisine. However, it has a deep connection to North American and European cuisines. In the U.S. a good version of the dish can be found on a lot of Italian and American restaurants, usually in the form of a pizza with a few other ingredients thrown in.
The new Ullin is the result of a collaboration between two chefs, Joakim and Tero Kalvohrjärvi. The dish, which is a mix of two American and two Italian ingredients, will be available in select restaurants in Finland and the Czech Republic in early 2010.
In the Czech Republic, the dish is called Škvětla, which in English translates to “chicken” in English. And yes, it means chicken. The dish is made by combining pork and chicken, usually minced, in the same pan. Once the dish is cooked, it is served atop a mound of potatoes, which are then topped with onions and sour cream.

It is also great as an appetizer! I had the most amazing ullin ils this past weekend. The combination of chicken, tomato, and onion was simply magical. I have to say, I’m not a huge fan of the potato salad, but I’m sure it’s no big deal.
